Preparation
Preheat oven to 400°F (205°C). Bake potatoes 1 hour or until tender when pricked with a fork.
Sauté onion and garlic in stock in a small saucepan.
When potatoes are done, scoop out and place in a food processor fitted with the metal blade. Add onion mixture, soy sauce and paprika; process until combined.
Stir in yogurt. Spoon mixture into potato shells.
Bake until hot.
