Roasted Herb Potatoes

Ingredients

1/3 cup Dijon Mustard
2 tbsp olive oil
1 whole garlic clove, finely chopped
1/2 tsp dried Italian seasoning
6 lb red-skinned potato, cleaned & cut into chunks

Preparation

Preheat oven to 425 degrees F.

Mix all ingredients except potatoes in small bowl.

Place potatoes in greased 13x9x2-inch baking pan; pour mustard mixture over and toss.

Bake at 425°F for 35 to 40 minutes or until potatoes are fork tender, stirring occasionally.
