Chocolate-Walnut Brownie Pudding



1/4 cup granulated sugar
2 tablespoon dutch-process cocoa
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
2 tablespoon vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts
3/4 cup packed brown sugar
1/4 cup dutch-process cocoa
1 1/2 cups water
1 cup all-purpose flour


Preheat oven to 350°F. Grease an 8x8x2-inch baking pan. Set aside.

In a medium mixing bowl stir together flour, granulated sugar, 2 tablespoons cocoa powder, baking powder, and salt. Stir in the milk, oil, and vanilla. Fold in the walnuts. Pour batter into the prepared pan.

In a small mixing bowl stir together the brown sugar and the 1/4 cup cocoa powder. Add the boiling water. Once combined slowly pour over batter in pan. Bake in a 350° oven for 40 minutes. Cool in pan on a wire rack for 45 to 60 minutes. Serve warm. If desired, serve with ice cream.
