Orange Blossom Rice

Ingredients

1 cup long-grain white rice
1/3 cup finely chopped celery
1 cup orange juice
1 cup fat-free stock, any type
2 tbsp dehydrated onion flakes
1/2 tsp grated orange zest
1/4 tsp butter-flavored salt or plain salt
1 tbsp reduced-fat margarine
2 whole navel oranges, peeled & chopped into ite-sized pieces

Preparation

Place all of the ingredients except for the orange bits in a medium-sized saucepan, and bring to a boil over medium-high heat.

Reduce the heat to the point of a slow simmer, cover, and cook for 15 to 20 minutes, or until all of the liquid has been absorbed. Do not lift the pot lid during cooking.

Add the orange bits to the rice, and toss gently to mix. Serve hot.
