Grilled T-Bone Steaks

Ingredients

4 tbsp butter
1 teaspoon dried tarragon crumbled
2 tbsp chopped parsley
1/4 tsp salt
1/4 tsp freshly ground pepper
1-1/2 lb t-bone steak each steak about 1" thick
1 pinch salt
1 pinch Freshly ground pepper

Preparation

To make the herb butter, beat the butter, tarragon, parsley, salt, and pepper together until blended. Form into a rough log, wrap in wax paper, and chill.

Have a barbecue fire ready. Sprinkle the steaks with salt and pepper to taste and grill them, turning every minute or two, about 8 minutes total for rare, 10 minutes for medium, and 12 minutes for well-done.

Top each steak with a slice of the herb butter before serving.
