Potato Chip Chicken Fingers

4 whole boneless, skinkess chicken breasts,
3 oz reduced-fat potato chips
¼ cup Reduced-fat mayonnaise
3 tablespoons light sour cream
3 tbsp low-fat milk
2 whole Garlic cloves, minced
1/4 teaspoon black pepper
1 tsp Italian herb seasoning

Preparation

Preheat oven to 400°F. Cut each chicken breast into about five pieces (cut the breast in half widthwise, then cut the thinner top half into two strips and the wider bottom half into three strips).

Place about chips (approx. 48 whole chips) into a plastic storage bag and crush into crumbs. Add the herb seasoning and mix. Dump mix out into a bowl. You should have about 3/4 cup of chips. Crush more, if needed.

Add the mayonnaise, sour cream, milk, garlic and black pepper in a bowl, mix until combined.

Dip each piece into the mayonnaise mixture and fully coat. Then repeat with the potato chips until the chicken piece is well coated. Then place on a cookie sheet making sure none of them are touching.

Bake for 20 minutes. Flip the chicken to the other side and continue baking 10 minutes or until both sides are lightly browned and the chicken is cooked through.
