Cranberry Orange Nut Bread

4 cups flour
2 cups sugar
1 tsp baking soda
1 tbsp baking powder
2 tsp salt
1/2 cup margarine
1-1/2 cups orange juice
2 tbsp orange peel, grated
2 eggs, beaten
1 cup walnuts, chopped
4 cups cranberry, chopped

Preparation

Preheat the oven to 375°F. Grease two loaf pans.

Sift all the dry ingredients together in a large bowl. Cut in the margarine, using a pastry blender, until it is about the size of a small pea.

Mix the orange juice, orange peel, and eggs together in another bowl, and then combine the mixture with the flour, stirring well. Fold in the nuts and cranberries.

Pour the batter into the prepared loaf pans, and bake at 375°F for 1 hour or until a toothpick inserted in the center comes out clean. Let the loaves cool in the pans, then wrap them in plastic wrap and let them rest overnight (this improves the flavor and makes slicing easier).
