Agave nectar is a sweetener that comes from the blue agave plant. The flower stalk produces sap that can be tapped and made into syrup. Because the sweetener comes from a plant it has trace amounts of vitamin B6, vitamin K, and folate. Since agave nectar is plant based it’s often the preferred sweetener among vegans. Just like sugar, it’s best to use blue agave nectar sparingly. Although it is natural it’s actually more sweet than sugar, so you can use less and achieve the same result.
Agave has a lower glycemic index (GI) than traditional sugar. Therefore, it digests slower helping to control blood sugar spikes. This can be beneficial for people with diabetes. The consistency of agave sweetener is very similar to honey. It goes well in hot coffee drinks, smoothies, kombucha, homemade salad dressings, and baked goods. Blue agave sweetener is available at most major grocery stores.
